El Diviso & Project Aji

This extraordinary coffee comes from the award-winning farm El Diviso, perched in the highlands of Bruselas, Huila, Colombia. Operated by brothers Adrian, Nestor, and Jonathan Lasso, the farm has become one of the most celebrated in the world—earning Runner-Up for Best Coffee in 2023 and claiming the title in 2024. On my recent visit, I had the opportunity to walk the farm with Jonathan, witness their meticulous methods, and taste some of the most expressive coffees I’ve ever cupped.

One of the standouts from this harvest is a rare Natural Bourbon Aji, processed with precision and creativity through an extended anaerobic fermentation. This lot is intense, luxurious, and fruit-forward—everything we love about El Diviso, but turned up with a touch of spice and a beautifully layered acidity.

Project Aji by the Lasso Brothers

This coffee opens with dazzling notes of candied citrus zest and juicy stone fruit. A vibrant, sparkling pomegranate acidity cuts through a silky body, while subtle ginger spice and a refined wine-like fermentation round out the cup. It’s intense yet polished—experimental in process, classic in structure.
