Grown by Felix Torres at Finca Hoyo Frío in Santander, Colombia, this coffee reflects both careful farm management and a layered approach to processing. In this region, coffee is intentionally cultivated under shade, allowing the trees to grow in a more stable environment protected from excessive sun exposure. This slower, more even maturation can help develop greater sweetness, structure, and balance in the cup.
Felix refers to this lot as “triple processed,” a multi-stage washed method that includes several moments of controlled oxidation, fermentation, washing, and cold-water rinsing. Together, the shade-grown conditions and careful processing create a coffee with depth, clarity, and a rounded sweetness.
For this Fellow-exclusive roast, we developed the coffee slightly further to highlight a fuller body and a warmer expression of the cup. Expect notes of Aguapanela, Candied Orange, Caramelized Fruit, and Silky Sweetness, with a clean structure and gentle lingering finish.
