Coco Cloud & Finca San Fernando

Coco Cloud comes from Gonzalo Mancilla at Finca San Fernando in Mesa de los Santos, Santander. Grown at 1,860 meters above sea level, this Caturra Chiroso brings together tropical sweetness, clean structure, and a coconut co-ferment that feels expressive without covering the coffee underneath.

Gonzalo is a highly experienced coffee professional and educator, with deep knowledge in sensory analysis, roasting, and processing. He is not drawn to overly fermented coffees, and this lot reflects that restraint. The coconut is present, but carefully integrated, allowing the cacao, vanilla, panela, and citrus character of the Chiroso to remain part of the cup.

Coco Cloud by Gonzalo Mancilla

In the cup, Coco Cloud reminds us of coconut macaroon and cocada, a Colombian homemade coconut candy. Expect toasted coconut, vanilla cream, panela, and soft cacao, with a delicate clementine finish that lifts the cup without taking over. It is creamy, tropical, clean, and especially beautiful as filter, flash brew, or cold brew.
