This exceptional coffee comes from the award-winning farm El Diviso, located in the highlands of Bruselas Huila, Colombia. Run by brothers Adrian, Nestor, and Jonathan Lasso, the farm has become a global benchmark for quality, earning Runner-Up for Best Coffee in the World in 2023 and taking the crown in 2024. During my recent visit to El Diviso, I had the chance to walk the farm with Jonathan and experience firsthand the precision and innovation that defines their work.

Among their most remarkable lots is this Natural Bourbon Sidra, a vibrant and refined expression crafted through an 80-hour anaerobic fermentation using native microorganisms, followed by a thermal shock process that locks in complexity and aromatic clarity. From the moment I cupped it, I knew this coffee belonged in our lineup.

Bourbon Sidra by the Lasso Brothers

This coffee showcases a stunning profile with notes of candied citrus zest, juicy stone fruit sweetness, and sparkling pomegranate acidity. A silky body carries through with subtle ginger spice and a finish marked by clean, winey fermentation. Elegant and fruit-forward, this cup offers intensity with poise and precision.
