The Farm: Quebraditas Coffee Farm

Nestled in the lush landscapes of Oporapa, Huila, Quebraditas Coffee Farm is a sanctuary for coffee enthusiasts seeking quality and sustainability. At an altitude of 1800 meters above sea level, the farm’s unique microclimate and rich soil contribute to the distinctive flavor profile of Juicy Storm. The farm’s organic approach minimizes environmental impact while maximizing the natural potential of each coffee bean.

Variety and Processing: The SL-28 Double Fermentation

Juicy Storm features the SL-28 variety, renowned for its resilience and exceptional flavor characteristics. What sets this coffee apart is its meticulous double fermentation process:

Initial Fermentation:

  • The SL-28 beans undergo a 96-hour oxidation in specialized bags. This natural fermentation phase enhances the beans’ inherent fruitiness and prepares them for the next stage.

Rehydration and Anaerobic Fermentation:

  • After drying, the beans are rehydrated and subjected to a 120-hour anaerobic fermentation with carefully selected microorganisms. This process intensifies the coffee’s complexity, introducing layers of nuanced flavors.

Final Drying:

  • The beans are then dried for another 96 hours, locking in the intense flavors developed during fermentation.

Step-by-Step Instructions

Step 1: Measure and Grind the Coffee

  • Weigh 22g of Juicy Storm coffee beans.
  • Grind the beans to a medium-fine consistency (setting 3 on Fellow Ode 2).

Step 2: Prepare the Equipment

  • Heat 350ml of water to 205°F (96°C).
  • Place the V60 dripper on your mug or carafe.
  • Insert the paper filter into the dripper.
  • Rinse the filter thoroughly with hot water to eliminate any paper taste and preheat the equipment.
  • Discard the rinse water from the mug or carafe.
  • Add the ground coffee to the filter and gently level the coffee bed.
    • Optional: Make a small divot in the center of the grounds to aid in the blooming phase.

Step 3: Blooming Phase (0s – 45s)

  • Start your timer.
  • Pour 75ml of water over the grounds in slow, small-to-large circular motions, ensuring all the coffee is saturated.
  • Swirl the dripper gently to promote even extraction.
  • Wait until the timer reads 45 seconds.

Step 4: Main Pours – Building Sweetness and Strength

  • Pour 2 (45s – 1:15s):
    • At 45 seconds, pour water up to a total of 200ml in wide circular motions.
    • Finish this pour by 1:15 minutes.
    • Gently swirl the dripper.
  • Pour 3 (1:25s – 1:35s):
    • At 1:25 minutes, pour water up to a total of 275ml in narrow circular motions, focusing on the center.
    • Finish this pour by 1:35 minutes.
    • Gently swirl the dripper.
  • Pour 4 (1:45s – 1:55s):
    • At 1:45 minutes, pour water up to a total of 350ml using a combination of wide and narrow circular motions.
    • Finish this pour by 1:55 minutes.
    • Gently swirl the dripper.

Step 5: Allow the Coffee to Brew

  • Let the coffee drip through completely.
  • Aim for a total brew time between 3:00 and 3:30 minutes.
  • Adjust grind size if necessary to reach the desired brew time.

Step-by-Step Instructions

  1. Measure and Grind: Weigh 18g of Juicy Storm coffee beans and grind to 1.1 (inner 2) on Fellow Opus Grind.
  2. Prepare the AeroPress (Inverted Method): Assemble the AeroPress in the inverted position (plunger at the bottom, chamber on top). Place two paper filters in the filter cap and rinse them with hot water to eliminate any paper taste. Attach the filter cap securely to the AeroPress. Add the ground coffee into the brew chamber.
  3. Bloom: Start your timer. Pour 50g of hot water (210°F / 99°C) over the coffee grounds and let it bloom for about 30 seconds.
  4. Stir: Stir vigorously 32 times to ensure even saturation of the coffee grounds.
  5. Add Remaining Water: Pour an additional 92g of hot water into the brew chamber. Stir gently to maintain even extraction.
  6. Prepare to Plunge: Fasten the filter cap securely and allow the coffee to sit for a moment.
  7. Flip AeroPress onto a Cup: Carefully flip the AeroPress onto your mug or carafe, ensuring it is stable.
  8. Slowly Press into the Cup: Slowly press down the plunger with steady pressure until all the liquid has been extracted.
  9. Dilute (Optional): Add 15g of room temperature water to the cup to mellow the intensity if desired.
  10. Mix & Serve: Pour the coffee back and forth between two carafes 10 times to ensure an even extraction. Serve and enjoy your perfectly brewed Juicy Storm AeroPress coffee!
